COOKING WITH HONEY - Pear Loaf Cake



Remember these 3 pears which were given to us recently? Well, I wanted to use them in something to bake so I got on line and found this recipe.


Pear Loaf Cake


Grease and flour a 9x5x3 inch loaf pan. Preheat oven to 350 degrees.

(I heated my over to 325 because of using honey)


2 medium pears, peeled and cored, chopped(I used these 3 small ones I had)

1 teaspoon lemon juice

Toss chopped pears with lemon juice in a bowl; set aside.


Streusel

1 cup all-purpose flour ( I used 1/2 cup white & 1/2 cup whole wheat)

1/2 cup light brown sugar, packed

4 ounces butter, cold, cut in small pieces

2 teaspoons ground cinnamon

1/3 cup chopped pecans


In another bowl, combine streusel ingredients, except pecans, with a fork until crumbly, or pulse with food processor. Stir in pecans, if using.



Cake

2 cups all-purpose flour (I used 1 cup white & 1 cup whole-wheat)

3/4 cup granulated sugar (I used 1/3 cup because of using honey below)

2 teaspoons baking powder

1/2 teaspoon salt

2 large eggs

1/2 cup milk, whole or low fat (I used 1/4 cup milk & 1/3 cup honey)

1 1/2 teaspoons vanilla

4 ounces butter, melted.



In a mixing bowl, combine flour, sugar, baking powder and salt; stir to blend.

Whisk eggs in a mixing bowl until blended, stir in milk, vanilla, and butter.

Add to flour mixture and fold with a wooden spoon or spatula just until dry ingredients are moistened.


Spoon half of the batter into prepared loaf pan, spread out to cover the bottom.





Here is 1/2 of the batter in the pan and the other three parts ready.

Sprinkle batter with half of the pears and half of the streusel.

Spool remaining batter evenly over streusel, spreading carefully to cover.

Sprinkle with half of the remaining streusel, the remaining chopped pears and then the remaining streusel.



Bake for 1 hour 10 minutes to 1 hour 20 minutes, or until a wooden pick inserted into center of cake comes out clean.

Cool in pan on a wire rack for 10 minutes.

Run a knife carefully around sides; invert the cake onto plate.

Turn the cake, streusel side up, onto a rack and let cook on a rack completely.


Finished product. It was very good.

I just bought some pears and I'm tempted to try it, but I know the kids will want to eat the pears. I'll just have to get some more next time!!!

That does sound and look delicious!! Isn't it neat that we can look online whenever we want to find a recipe to use something we have on hand? =)

Looks delicious. What I r e a l l y like is the okra.
Of course you can take the McCain/Palin picture. I wish everyone in blogland had it on their blog. what wishful thinking.

This looks so good! I have not had breakfast yet and would love a serving of this with a warm cup of tea! I was told yesterday that I can take all the pears I want from a friend's pear tree. I may have to use this recipe and maybe even can some pears!

I also wanted to say that I appreciate the way you share ideas of ways we can get by with what we have! There is SOOO much a person can do to make the most of their income and to handle hard financial times. Every little bit, when added together, shows a difference!

OH that looks delicous.

I'm looking for an apple cake recipe. I have tons of apples that I received from a friend.
So need to be making lots of things with them.
I've already made some applesauce and apple oatmeal.
Plus we love eating them fresh..but need to find lots of recipes of things I can do with my apples.
